Yields: 12 portions

Turkey Ingredients:

  • 12-14 lb whole turkey
  • Apple wood and mesquite blend smoker chips

 

Brine Ingredients:

  • 3 cups of apple cider
  • 3 cups of lemon juice
  • 4 lbs of garlic, fine chopped
  • 1 cup of kosher salt
  • 1/2 cup of black pepper


Preparation

  • Combine all brine ingredients and allow the turkey to marinate for 48 hours
  • Load the smoker with apple wood and mesquite blend smoker chips
  • Cook at 240 degrees until internal temperature reaches 165 degrees
  • Remove and allow to rest
