Corvina Fish Tacos | Thrive in the Kitchen

This recipe for Corvina Fish Tacos is an excellent way to introduce omega 3 acid into your diet. Omega 3s can improve symptoms of mental health disorders such as depression or anxiety, fight autoimmune diseases, and prevent against cancer. Also, topping these tacos with the delicious cabbage slaw adds vitamin C and a nice crunch to every bite!

Corvina Fish Tacos
Yields:
3 tacos (2 ounces per taco)
Total prep & cook time: 1 hour

Ingredients: Pickled Carrots

  • ¼ cup julienned carrots
  • ⅜ oz. rice wine vinegar
  • ⅛ teaspoon orange marmalade
  • ⅛ teaspoon light soy sauce

Preparation: Pickled Carrots
Combine rice wine vinegar, orange marmalade and light soy sauce over heat until the marmalade dissolves into the mixture. Place the carrots in a bowl or jar with a cover and allow them to marinate in this mixture for at least 1 hour. (The longer they marinate, the more intense the flavor.)

Ingredients: Taco Slaw

  • ¼ cup julienned red cabbage
  • ¼ cup julienned green cabbage 
  • ¼ cup pickled carrots – see recipe above
  • 1 tablespoon distilled apple cider vinegar
  • 1 tablespoon finely chopped cilantro
  • 1 teaspoon agave nectar
  • Kosher salt, to taste

Preparation: Taco Slaw
In a large bowl, combine all of the slaw ingredients, and place them in refrigerator for at least 1 hour prior to use. This can be prepared ahead of time and stored in the refrigerator for 1-2 days.

  • 2 tablespoons sour cream
  • 1 ¼ teaspoon lime juice
  • ⅛ teaspoon orange zest
  • Kosher salt to taste

Preparation: Citrus Cream
Combine all ingredients. Place the prepared citrus cream in the refrigerator until you are ready to assemble tacos.
This can be prepared ahead of time and stored in the refrigerator for 1-2 days.

Ingredients: Blackened Corvina Fish Taco

  • 6 oz. Corvina fish
  • 1 teaspoon blackening seasoning
  • 2 tsp vegetable oil
  • 3 white corn or flour tortillas
  • ¼ cup slaw
  • 1 teaspoon citrus cream

Preparation: Blackened Corvina Fish
Coat the Corvina fish with blackening seasoning on both sides.  Spray the pan with the vegetable cooking spray and heat over medium-high heat for about one minute. Add the fish and cook on each side for approximately 2-3 minutes, or until its internal temperature is 130 degrees.

Preparation: Blackened Corvina Fish Tacos
Heat the tortillas on a griddle or in a microwave, and cut the cooked Corvina fish into cubes.
Place 2 ounces of fish and slaw on each tortilla. Add citrus cream and serve.
