Root Beer Chicken Sliders & Potato Salad

Total prep & cook time: 3 hours

Root Beer Chicken Slider Ingredients:

6 chicken thighs, large boneless
3 cups Root Beer
2 Tablespoons ginger
1 Tablespoon cilantro
1 cup pineapple juice 
1 Teaspoon coriander 
¼ cup low sodium soy sauce
8 brioche slider buns
One slice of fresh pineapple, per slider
One thin slice of red onion, per slider
¼ of a slice of provolone cheese per slider
1 Teaspoon orange marmalade per slider


Root Beer Chicken Slider Preparation

  1. Combine all ingredients and toss with chicken
  2. Marinate in fridge for 2-3 hours
  3. Transfer to a covered oven dish and cook in the oven at 350 degrees until chicken has reached 165 degrees
  4. Remove chicken and pull apart
  5. Toss with remaining sauce in oven dish
  6. Divide hot pulled chicken onto each toasted bun
  7. Top with pineapple, red onion, provolone, and orange marmalade

  2. Place in oven safe tray and roast potatoes until tender at 375 degrees
  3. Remove potatoes and allow to cool
  4. Prepare and combine vegetables, pickles, and parsley with potatoes
  5. Fold in mustard, vegan mayonnaise, salt, pepper, and ground celery seed
