Potato Pancakes
- 1 Yukon potato boiled and mashed.
- 1 Yukon potato finely grated.
- 2 eggs, whole
- ¼ cup flour
- ¼ cup milk
- 1 Tablespoon dill, chopped.
- Kosher Salt and Black pepper to taste.
MOP:
combine all ingredients and form to even cakes. Using nonstick skillet add ¼ cup vegetable oil. Brown on each side. Finish in the oven at 375 degrees until firm.
Herb Aioli
- Yield: 1 cup
- ¾ cups mayonnaise
- 1 Tablespoon Dill
- 1 Tablespoon Basil
- 1 Tablespoon Parsley
- 2 garlic gloves, peeled.
- 1 Tablespoon Lemon Juice
- Kosher salt to Taste
Assembly:
Blend all ingredients with emersion blender or in a food processer.
Main Dish
- 3 slices Tomato
- 3 slices red onion
- 2 Potato Pancakes
- 4 slices smoked salmon, rolled.
- 2 lemon wheels
- 1 Tablespoon herb aioli
- 1 pinch cracked black pepper.
- 1 Tablespoon Microgreens
Assembly:
Place tomato and onion on the bottom of the plate, position potato cakes on top, add 1 Tablespoon herb aioli onto the top of potato cakes, smoked salmon, microgreens, cracked black pepper, and lemon for garnish.
